Plantain fritters
Ingredients:
■ 2 large ripe plantains
■ 1 cup self-raising flour
■ 1 small onion
■ sea salt to taste
■ cracked black pepper to taste
■ chilli flakes to taste
■ ¼ tsp ground cumin
■ vegetable oil for frying Method:
■ Mash the peeled plantain with a fork or process in a food processor until smooth. Place the remaining ingredients into the food processor and blitz until you get a smooth batter.
■ Heat the vegetable oil in a deep fat fryer or a heavy-based pan. When the oil begins to shimmer, drop a couple of tablespoons of the batter into the hot oil. Fry until golden brown all over.
■ Take out with a slotted spoon and drain on absorbent kitchen paper. Taste and adjust the seasoning before continuing frying the remaining batter. Serve hot with a dip of your choice.
