Clementine salsa
Serves six as a side dish
Ingredients:
■ 3 clementines, peeled and chopped
■ 2 large ripe tomatoes, chopped
■ 1 onion, peeled and chopped
■ 1 avocado, peeled and roughly chopped
■ 1 tbsp lime juice
■ handful of freshly chopped coriander
■ salt and pepper to taste ■ ■ ¼ tsp ground cumin 2 jalapenos, thinly chopped
Method:
■ Prepare all the fresh ingredients. Mix the lime juice with the cut avocado to prevent it from browning. Combine and taste; adjust the seasoning and serve. This salsa can be eaten with tortilla chips, in sandwiches or even on a bed of rocket or any salad leaves of your choice.
