Corn­bread muffins

Easy Cook - - EVERYDAY FOR TWO -

Heat oven to 200C/180C fan/gas 6. Grease a 12-cup muf­fin tray. Mix 300g plain flour 50g ic­ing sugar, 300g po­lenta, 1 tbsp bak­ing pow­der and 1 tsp salt in a bowl, then add 1 beaten egg, 250ml milk and 200g melted but­ter. Di­vide into the tin and bake for 20-25 mins.
