Heat oven to 200C/180C fan/gas 6. Cut 2 very thick slices white bread, then use a spoon to scoop out a dip in the middle of each. Put the bread on a baking tray and place in the oven for 10 mins until lightly toasted. Crack an egg into each dip, then cover the whole thing with 100g leftover cheese and bake until melted and golden. Serves 2.
