Heat oven to 200C/180C fan/gas 6. Cut 2 very thick slices white bread, then use a spoon to scoop out a dip in the mid­dle of each. Put the bread on a bak­ing tray and place in the oven for 10 mins un­til lightly toasted. Crack an egg into each dip, then cover the whole thing with 100g left­over cheese and bake un­til melted and golden. Serves 2.
