Cheat’s chicken Kiev

5 tbsp cream cheese 2 gar­lic cloves, crushed 1 tbsp chopped pars­ley 2 skin­less chicken breasts 6 slices pancetta olive oil, for brush­ing salad or green beans and

new pota­toes, to serve

1 Heat oven to 190C/170C fan/gas 5. Mix the cream cheese, gar­lic, herbs and some sea­son­ing. Cut a slit in the side of each breast, be­ing care­ful not to pierce through. Use your fin­gers to make a big­ger pocket, then stuff in the creamy mix­ture. Sea­son each breast, then wrap in three slices of pancetta to cover the pock­ets tightly.

2 Put the chicken on a bak­ing tray, brush with oil and bake for 18-20 mins or un­til cooked through. Serve with a salad or green beans and but­tery new pota­toes. PER SERV­ING 459 kcals, fat 33g, sat­u­rates 17g, carbs 1g, sug­ars none, fi­bre none, pro­tein 40g, salt 1.7g
