Cheat’s chicken Kiev

5 tbsp cream cheese 2 garlic cloves, crushed 1 tbsp chopped parsley 2 skinless chicken breasts 6 slices pancetta olive oil, for brushing salad or green beans and
new potatoes, to serve
1 Heat oven to 190C/170C fan/gas 5. Mix the cream cheese, garlic, herbs and some seasoning. Cut a slit in the side of each breast, being careful not to pierce through. Use your fingers to make a bigger pocket, then stuff in the creamy mixture. Season each breast, then wrap in three slices of pancetta to cover the pockets tightly.
2 Put the chicken on a baking tray, brush with oil and bake for 18-20 mins or until cooked through. Serve with a salad or green beans and buttery new potatoes. PER SERVING 459 kcals, fat 33g, saturates 17g, carbs 1g, sugars none, fibre none, protein 40g, salt 1.7g
