Make it veg­gie Grilled hal­loumi with herby veg salad

Roast the veg as above, then heat the grill to high. Thinly slice a 225g pack hal­loumi, spread over a bak­ing sheet and grill for 2-3 mins un­til golden and crisp. Toss the veg­eta­bles with 1/ bunch mint 2 and a small bunch co­rian­der, roughly chopped, and 4 hand­fuls rocket. Serve with the warm hal­loumi, driz­zled with a lit­tle bal­samic vine­gar.
