All-new cheese & pineap­ple

500g fresh pineap­ple 1 bunch mint 25g toasted sesame seeds 250g pack hal­loumi

1 Heat oven to 180C/160C fan/gas 4. Chop the pineap­ple into chunks and put in a roast­ing tin. Bake for 35- 40 mins un­til golden, then cover and set aside. Chop the mint leaves and mix with the sesame seeds in a dish. Set aside.

2 Cut the hal­loumi into cubes and char on all sides in a hot non-stick fry­ing pan. Toss the pineap­ple in the sesame and mint mix­ture, then thread onto cock­tail sticks with a piece of hal­loumi.
