When you add the pasta to the sauce, splash in a little of this water if it looks too dry. The starch in the liquid will help the sauce cling to the pasta. Most of the pasta produced in Italy is made from durum wheat. Durum is a tough grain, providing durum wheat pasta with its distinctiv­e bite. It is a golden coloured grain, which also gives the pasta a yellow hue.
