TAKES 1HR 15 MINS, PLUS CHILLING TIME 200C/gas 6. Line the pastry case with the greaseproo­f paper and baking beans and bake blind for 20 mins. Remove the paper and beans, prick the base and bake for a further 10 mins.

Heat 2tbsp of the oil in a frying pan and fry all the onions and shallots for around 25 mins, until they start to caramelise. Add the thyme and anchovies, and fry for a further 5 mins. Add to the pastry case, season and return to the oven for 10 mins. Drizzle with the remaining olive oil and scatter over the extra thyme sprigs.
