The Swan, Loddon
We’re not vegetarian at EDP Norfolk magazine, but we do understand that good things can be done in the kitchen without the addition of meat or fish. We recently put this to the test at The Swan in Loddon when the pub held a five-course vegetarian tasting evening. Chef Jason Wright’s menu opened with potato risotto and a dainty smoked quail’s egg. Salt-baked celeriac followed, then a wild mushroom consommé, all flavours of autumn and clear as a bell. Smoked aubergine polenta with goat curd and pickled beetroot finished the savoury courses and an exquisite lemon mouse with pomegranate and hazelnut finished the evening.
It was a fine example of what can be created with some imagination. If they have another veggie evening I can thoroughly recommend it.
