Brat is, in fact, an old English nick­name for tur­bot. Said fish, as well as sole, young leeks and Herd­wick lamb are cooked, Basque-style, over flames, at the large fire pit lo­cated at one end of this restau­rant on the first floor of a ware­house-style build­ing in Shored­itch, Lon­don.
