Cup­board sta­ple? Mus­tard. It has to be both sweet and strong, but it can be used in so many ways to cre­ate flavour. Go-to recipe book? Made in Italy by Gior­gio Lo­catelli. It ex­plains per­fectly all the ba­sics of Ital­ian cook­ing, such as how you should make your sauces from scratch. What kind of cook are you? A so­cial one – I like to do my cook­ing with peo­ple around. It’s al­ways nice to have one of my sons or guests stand­ing next to me so I can spend time with them while I’m chop­ping vegeta­bles. Most im­por­tant uten­sil? There is ab­so­lutely noth­ing worse than a kitchen with­out a sharp knife.

When you’re not cook­ing, where do you like to eat out? Pluto in Copen­hagen. They serve small plates in­spired by Span­ish, Ital­ian and Nordic cook­ing. The food is ex­tremely good.
