“Short and sweet, with a punch” is Morito manager Jack Sapsed’s descriptio­n. “Manzanilla and Fino sherries tend to contain plenty of citrus notes, among others, which are accentuate­d when mixed with fresh lemon juice.

The two flavours really complement each other and the addition of sugar balances out the sharpness. If it’s too sharp, you can always add more sugar to the recipe."

Top tip: first and foremost this is an aperitif, but it would go nicely with a few smoked almonds, or some Padrón peppers to cut through the bitter flavours.

Ingredient­s

• 50ml Gabriela Manzanilla sherry

• 25ml lemon juice

• 20ml sugar syrup (mix 1:1 water and sugar to make)

Method

1. Pour ingredient­s into a Boston shaker (no ice just yet). Have a chilled sherry glass, strainer and sieve handy.

2. Now add plenty of ice to the shaker, shake hard and double strain into a chilled sherry glass.

3. Serve and drink immediatel­y.
