BIG APPLE

Rachel Khoo creates a scrumptious Boxing Day pudding that’s guaranteed to please

I don’t think it’s controversial to state that an apple crumble is one of the all-time greatest comfort foods. I tried a version of this recipe using pears, but there was something that just didn’t match up to the tart acidity paired with the sweetness that you get from roasting an apple. This would be a treat to come home to after a bracing Boxing Day walk. 10 minutes. By this point they should have puffed up a little, but still be holding their shape. Meanwhile, rub all the ingredients for the crumble together in a medium bowl.

Remove the apples from the oven and cover with the crumble, letting some of the mixture spill and scatter across the tray so it will crisp up nicely. Return the tray to the oven and cook for a further 15 minutes or until the crumble has crisped up.

Place each apple on a plate or in a bowl, add a scoop of ice cream and serve with the apple top and any extra crunchy crumble from the tray.

Best for spicing it up
