Maurizio Palomba
As head of wine and sake at London’s highest restaurants Duck & Waffle and Sushisamba, Palomba is used to working hard to find wines that match all manner of fusion foods and that are as special as the view. We challenged him to pair drinks to our globetrotting set of recipes, from the subcontinent to Sussex, and he has come through. His matches for our Indian recipes (p42) are superb.
