As head of wine and sake at Lon­don’s high­est restau­rants Duck & Waf­fle and Sushisamba, Palomba is used to work­ing hard to find wines that match all man­ner of fu­sion foods and that are as spe­cial as the view. We chal­lenged him to pair drinks to our glo­be­trot­ting set of recipes, from the sub­con­ti­nent to Sus­sex, and he has come through. His matches for our In­dian recipes (p42) are su­perb.
