As head of wine and sake at London’s highest restaurant­s Duck & Waffle and Sushisamba, Palomba is used to working hard to find wines that match all manner of fusion foods and that are as special as the view. We challenged him to pair drinks to our globetrott­ing set of recipes, from the subcontine­nt to Sussex, and he has come through. His matches for our Indian recipes (p42) are superb.
