AYour little plant is Claytonia sibirica, sometimes called miners’ lettuce, and yes, it can be eaten as a salad leaf. It’s an introduced plant that has escaped to become a weed. A short-lived perennial or biennial, it often germinates in autumn to flower and set seed in spring.
