CHEAT’S APPLE TART

We all have days when it’s a struggle to find time to eat, let alone cook. For these frazzled moments a roll of frozen puff pastry and a bag of apples can be everyone’s friend.

You will need: Pack of frozen puff pastry Juice of one lemon 6 British eating apples, peeled, cored and finely sliced 1 tbsp butter 1 tbsp caster sugar 3 tbsp apricot jam

1. Preheat the oven to 220C (200C fan/gas mark 7) and line a baking tray with parchment. 2. Roll out the puff pastry and trim to a 30cm (12in) circle. 3. Squeeze the lemon juice into a bowl and add the apple slices. Arrange over the surface of the pastry, leaving a clear couple of cm around the outside, then use your fingers to form a retaining edge. 4. Dot over the butter, sprinkle with caster sugar then bake in the oven for 15-20 minutes. 5. Warm the apricot jam and use a pastry brush to coat the top of the now-golden tart. Consume with lashings of double or clotted cream.
