TOMATO BRUSCHETTA
Sometimes the simplest recipes are impossible to beat and the best way to enjoy the first sun-warm tomatoes is to pile them high on a garlicy slice of toasted sourdough bread.
You will need: l 2 large sweet tomatoes l Sea salt l Extra virgin olive oil l Slices of sourdough, cut 1cm (½in) thick l 1 garlic clove, peeled l Several basil leaves
1 Roughly chop the tomatoes and stir in a pinch of sea salt and a small glug of olive oil.
2 Heat a griddle pan until searing hot, toast the sourdough slices on both sides.
3 Rub the garlic clove over the toast then drizzle with a little olive oil.
4 Heap a spoonful of tomatoes onto each slice and top with a basil leaf.
