Getting firm with my fig!

-

Fig trees have done really well, producing a bumper crop thanks to the hot weather, but now it’s time to get brutal with them! You’ll notice plants are covered in unripe, smaller fruit, but don’t leave them on the tree as they won’t ripen next year. Any fruit over the size of a pea will be damaged by frosts and drop off in the coming months, so only leave the tiny embryonic fruit in situ, as this will swell and produce your crop next year. That said, don’t compost the removed fruit as there are plenty of recipes online for preserved green figs in syrup. These candied beauties are delicious served with a Christmas cheese board; it’s just a shame it’s not a figgy pudding!
