3 WAYS TO TRY
Make a salad of lettuce, coriander, avocado, radish and cucumber. Add prawns that you have left to marinade in blended green chillies, lime juice and salt.
Make turkey burgers by mixing mince with seasoning and frying. Top with yoghurt whisked with lemon juice and curry powder. Serve each burger with sauce within a lettuce leaf.
Wrap a white fish fillet in slightly boiled and drained lettuce. Fry the lettuce parcels gently in butter for about 3 minutes on each side. Serve with a sauce of melted butter and lemon juice.
