Force rhubarb

Dig up a clump of rhubarb to bring inside and force delicious, tender early stems. Pot up the fleshy root loosely in compost, then place it somewhere warm and dark. The easiest option is to put a bin over it.

Keep checking for new stems and crop them when they’re about 30cm long. Harvest by holding a stem at the base and gently pulling it from the crown. It will be pale, sweet and succulent. Once the stems have been cropped, plant the crown outside again. Give it a good feed to help it recover and build up its strength.
