Courgettes

Courgettes are one of the first veg I felt confident growing – try to harvest when tiny, no longer than 8-10cm.

Ways to enjoy

I use a speed peeler to shave them into thin ribbons, then dress with lemon, truffle oil, black pepper, parmesan flakes and toasted almonds. If any have been hiding and grown bigger, I treat them the same, but thinly slice them by hand and stick them on the barbecue or griddle first. I also stuff the flowers with ricotta, then deep fry and drizzle with honey and salt. Use male flowers, so you don’t lose any fruits.
