Courgettes
Growing courgettes at home is easy. I like to harvest them when they’re quite young and if the flowers are in good condition, I’ll use those too.
Ways to enjoy
Finger-sized courgettes can be eaten raw as crudités or sliced into salads. They have a light pea-like flavour and nutty texture. When they’re bigger, I cook them. I love them roasted and served with smashed white beans, capers and lemon. Or barbecue them with basil and garlic, and serve with labneh, a Greek strained yoghurt cheese, and flat breads. When bigger still, I make a creamy courgette soup finished with dill and goat’s cheese.
