Harvest your crop of chillies

Check that each chilli feels firm and shiny before cutting it off the plant, keeping the stalk that holds it on the plant intact. Discard any that are soft and use those that are damaged straightaw­ay as they won’t keep for long. If you put some in the salad drawer of the fridge they’ll keep for a week or so.

Preserve your chillies for longer by pickling them, threading the stalks with strings to hang and dry, or freeze the fruits on a tray before putting them into bags.
