Pickle chillies
If you have a good harvest of chillies and find that you have more than you can use fresh, pick now for pickling.
The chillies will need to be ripe, fresh and clean with perfect skins to be suitable. There are many pickling recipes, some add herbs and garlic, while others have extra spice.
Pack them into sterilised jars, whole or sliced, then add the pickling liquid such as vinegar. For more on harvesting chillies, see p110.
