Grow elephant garlic

Elephant garlic is now something I consider to be essential, because the enormous cloves grow well, store well and taste very well indeed. Each one is the size of an orange segment, but for all its scale it is distinctly delicate compared with some of the more powerful garlic varieties.

Garlic grows best when it can spread its extensive roots down into free-draining but organicall­y rich soil and in full sun. I plant the cloves in rows or a grid – making sure I have the pointed end facing up – 1-2in deep and about 6-9in apart. I then cover the area with 1in of good garden compost. This protects the growing shoots (and effectivel­y makes the planting a little deeper, which is never a bad thing) and enriches the soil.

Keep the surroundin­g soil weed free and make sure the plants are well watered in spring as the foliage is growing.
