You can prune many other deciduous trees formatively in the dormant season, although not all require an open goblet shape. They include:
Birches – just be aware that leaving this too late can cause excessive bleeding of sap.
Maples – acers need little pruning and it can spoil their natural shape. But if necessary, some very careful pruning can be done this month.
Poplars – this is a good time, especially to remove suckers.
