Dublin may have been late to the cocktail renaissanc­e, especially compared to Europe’s cocktail leader, London, or other key nearby cities like Edinburgh. But in recent years, the great Irish city known on the drink-side for Guinness, pubs and a pint, is coming into its own on the cocktail side. This slow-but-steady growth mirrors the rise in Irish gins across the country, like Glendaloug­h’s seasonal gins or Ha’Penny‘s Victorian-era Dublin gin with botanicals like blackberri­es, lavender and geranium.
