Phoebe

Nose: Imagine putting your head firmly in your kitchen garden’s herb pot. Some really punchy thyme.

Palate: The thyme is still with us, but right behind it is a sweet hint of citrus zest and that well-oiled juniper that we know and love.

Finish: Traditional and botanical-heavy, but it packs a punch with the pine notes still hanging around on the finish.

Comments: There’s plenty of character here. I’d be tempted to test it out in a Negroni and see how it stands.

David

Nose: The tart sweetness of candied fruit peel is followed by a green, leafy stalkiness.

Palate: An intense and oily flavour profile that is simply packed full of character: the sweetness of parma violet sweets is combined with lavender and pine needles.

Finish: Botanical flavours coat the tongue before a long finish with notes of menthol, cedar and black pepper.

Comments: A powerful gin that would stand up well to heavy mixing.
