Nose: Salty-sweet, like shellfish in white wine and cream sauce with lemon and parsley. Crisp, vegetal bell pepper. Rye bread and dill come later.

Palate: Salty notes fade back and sweeter citrus, dill and grain notes come forward with piney juniper and angelica. The texture is simply delightful.

Finish: Lengthy and slightly drying. The coastal, meatier notes return for a final flourish with juicy citrus.

Comments: This evolved cleverly from nose to palate, and would be at home in a long, refreshing serve.

Nose: A little aggressive on the nose with green salty aromas that come across as slightly stewed.

Palate: Plump, fruity, and rather tropical with notes of mango, pineapple, and passionfru­it. It is fruity, but not overly-sweet bright and refreshing.

Finish: There’s a cucumber-like freshness on the finish along with zingy lemon peel.

Comments: The nose and the taste are not in perfect harmony, but the gin would make some delicious, thirstquen­ching drinks.
