Nose: Slightly overcooked rhubarb and ginger cake, with hints of burnt sugar. There’s an interestin­g savoury edge to it.

Palate: Sweet stewed rhubarb notes, perhaps leaning a little bitterswee­t. Strong powdered ginger and a hint of turmeric.

Finish: It fades fairly swiftly with some drying, slightly nutty rhubarb notes.

Comments: The rhubarb character of this was unusual, and it wasn’t especially sweet for a flavoured gin. It could probably stand up to the stronger flavour of ginger beer.

Nose: Fiery ginger is evident from the fore, fresh and invigorati­ng, followed by the fruity, stalky tartness of uncooked rhubarb.

Palate: The taste is all about rhubarb: sharp and tart, but in a way that rhubarb fans will know and love! Warming spice then gradually appears, and ginger fire reappears.

Finish: A beautiful finish of chocolate-covered stem ginger and a gentle acidity.

Comments: I think this is an imaginativ­e take on a rhubarb gin with lots of potential – I’d start off by having it in a toddy.
