Nose: Savoury and creamy notes combine in sour cream and chive chips. Then, hints of resinous juniper, barbequed pineapple, oily orange peel and very ripe strawberri­es.

Palate: Classic oaky notes of vanilla and caramel, with hints of fruit and sour cream, like fromage frais, then juniper and angelica.

Finish: Drying, with piney notes alongside oak tannins, nut brittle and a little heat.

Comments: The profile of this gin paired nicely with the wood influence. A solid partner for ginger beer, or root beer.

Nose: Honeyed butterscot­ch with rich aromas of toffee and wood. An echo of pine.

Palate: Complex and, with the oily texture, almost chewy. There’s lots going on: resinous pine; zesty citrus; spicy coriander; and fragrant, floral notes. The alcohol is wellintegr­ated and carries the complexity nicely.

Finish: Relatively short with notes of violet and berries, before an oaky, vanilla woodiness.

Comments: What it lacks in balance, this gin makes up for in complexity. It would make a fantastic Martinez.
