ENERGY BOMBS
(Serves 12)
Spirulina is a type of algae that is packed with protein and B vitamins – find it in health food shops
INGREDIENTS:
250g pitted dates; 250g raw walnuts; 3tsp spirulina powder; desiccated coconut, to coat
METHOD:
1. Put dates, walnuts and spirulina into a food processor and blitz until a stiff paste forms.
2. Sprinkle desiccated coconut on a plate and have another clean plate to hand. Break off thumb-sized pieces, roll them into balls and roll in the coconut. Place the balls on the clean plate. 3. Place in the fridge for several hours to firm up for a chewy texture.
