ONE-PAN ROAST POTATOES, SPROUTS AND BACON

750g (1lb 10½oz) baby new ◆ potatoes, halved if large 2tbsp olive oil ◆
A few thyme sprigs, leaves picked ◆
500g (1lb 2oz) Brussels sprouts, ◆ halved if large 200g (7oz) smoked bacon lardons ◆ 1 Preheat oven to 200°C (180°C fan) mark 6. Toss the new potatoes in a large roasting tin with the oil, thyme and seasoning. Roast for 25min. 2 Add the sprouts and lardons and cook for a further 20-25min until potatoes are tender and sprouts and lardons crisp.
