Creamy yellow and sporadic blue veins make for a dense wedge of cheese with balanced salt, nuttiness and earthy mushroom flavours followed by a bolt of tangy blue with a hint of spicy pepper at the finish. Overall, our testers adored its buttery, melt-in-themouth consistenc­y and favoured its complexity above the rest.

81/100 £4 for 225g A web of blue veins and green tinge make this crumbly Stilton punchy. Our testers described it as sharp, similar to a Danish Blue, with an aroma of yeasty sourdough. Creamy in texture with a nutty finish, our testers found themselves wanting more!

Tesco Finest Mature Blue Stilton

78/100 £4 for 400g This cheese is firm, pearly white to yellow and marbled with furry blue veins. It has a creamy farmyard taste and a pronounced earthy, mineral note. It was strong but well balanced, with a smooth texture.

Morrisons The Best Blue Stilton

77/100 £3.72 for 454g Rich, golden yellow with well-defined blue marbling, this Stilton is rather mellow for a blue, but has the strength of a mature Cheddar. Full-flavoured, the family will find the melt-in-the-mouth richness and grassy finish wonderfull­y moreish.

Booths Potted Blue Stilton

77/100 £13 for 300g Beautifull­y presented in a ceramic pot, this will certainly liven up your cheeseboar­d. The cheese is hard and crumbly with a greenyblue marble. Mild yet flavoursom­e, it has a mouthwater­ing smoothness and lingering creaminess. Although it lacked real punch, it was enjoyed nonetheles­s.

Take Stilton out of the fridge up to an hour before serving and remove the wrapper to let it breathe.
