We love a traybake for a stress-free weeknight supper. We’ve gathered this collection of our favourite GH recipes, for minimum fuss, maximum flavour (and hardly any washing-up!)

MEDITERRAN­EAN LAMB

Serve with crusty garlic bread for a true taste of the Med!

Hands-on time 20min. Cooking time about 25min. Serves 4

◆ 1tbsp olive oil ◆ 2 medium courgettes, roughly chopped ◆ Handful pitted black olives ◆ 2tsp dried oregano ◆ 2 red onions ◆ 400g (14oz) lean lamb mince ◆ 1 medium egg ◆ 40g (1½oz) fresh white breadcrumb­s ◆ 1tsp dried mint ◆ 250g pack cherry tomatoes ◆ 75-100g (3-3½oz) feta, to taste ◆ Large handful rocket, to garnish

1 Preheat oven to 200°C (180°C fan) mark 6. Put the oil into a medium-large ovenproof serving dish and add the courgettes, olives, oregano and some seasoning.

2 Next, coarsely grate half of one of the onions and put into a medium bowl. Cut the remaining 1½ onions into wedges and add to the serving dish – toss together.

3 Add the lamb, egg, breadcrumb­s, dried mint and plenty of seasoning to the grated onion. Mix together (using your hands is easiest) and shape into meatballs, then position among the veg. Cook in the oven for 20min, or until the meatballs are fairly golden, then add the tomatoes and cook for a further 5min.

4 To serve, crumble over the feta and garnish with rocket.
