The Laughing Cow Chicken and Pepper Quesadillas

◆ 2 tortillas ◆ 8 The Laughing Cow Light Triangles ◆ ½ red pepper, thinly sliced ◆ ½ yellow pepper, thinly sliced ◆ 100g cooked chicken breast, shredded ◆ 25g frozen sweetcorn, defrosted ◆ ¼ tsp chilli flakes ◆ 25g baby spinach leaves
1 Spread one tortilla with 4 of The Laughing Cow Light Triangles. 2 Top the cheese with the peppers, chicken, sweetcorn, chilli flakes and spinach leaves. 3 Spread the remaining The Laughing Cow Light Triangles on the other tortilla and place it cheese-side down on top of the filling to make a ‘sandwich’. 4 Heat a frying pan over a medium heat. Place the quesadilla in the frying pan and cook for 4-5 minutes on each side, until golden. 5 Remove from the pan and cut into wedges to serve.
