TEAR AND SHARE CHEESY HEDGEHOG BREAD Ready in minutes and perfect for a gathering.

◆ 250g (9oz) Camembert ◆ 100g (3½oz) round goats’ cheese ◆ 400g (14oz) loaf crusty white bloomer (unsliced) ◆ 1 garlic clove, crushed ◆ 2tbsp olive oil ◆ 1 rosemary sprig, leaves finely chopped ◆ ¾tsp sea salt flakes

1 Preheat oven to 180°C (160°C fan) mark 4. Trim and discard the rind off the sides of the Camembert and goats’ cheese. Roughly chop.

2 Into the centre of the top of the loaf, cut a rough 10cm (4in) round, about 4cm (1½in) deep – this will become the bowl in which the cheese bakes. Cut the rest of the loaf into a cross hatch pattern, cutting almost down to the base of the loaf and spacing the cuts 2.5cm (1in) apart.

3 In a small bowl, mix the garlic, oil, rosemary and some freshly ground black pepper. Transfer the loaf to a baking tray and drizzle over the oil mixture, working it into the cuts. Sprinkle over the salt. Fill the carved hole with chopped cheese. Cover loaf loosely with foil.

4 Bake in the oven for 25min until cheese is oozing. Serve immediatel­y.
