SAVOURY CROIS­SANT STRATA A strata is the ul­ti­mate in Amer­i­can com­fort food – a savoury, cheesy break­fast casse­role. We’ve upped the in­dul­gence by us­ing crois­sants. Heaven.

Hands-on time 15min, plus (overnight) chill­ing. Cook­ing time about 1hr. Serves 8

◆ 8 crois­sants, prefer­ably stale (see GH Tip) ◆ 4tsp Di­jon mus­tard ◆ 8 slices Parma or ser­rano ham ◆ But­ter, to grease ◆ 175g (6oz) Gruyère cheese, grated ◆ 8 large eggs ◆ 800ml (1⅓ pint) whole milk ◆ 200g (7oz) cherry toma­toes, halved ◆ 1½tbsp finely chopped chives

1 Halve the crois­sants length­ways and brush the cut sides with mus­tard. Sand­wich each crois­sant back to­gether with a slice of ham, then ar­range on their sides in a large greased bak­ing dish. Scat­ter the cheese over, get­ting it in be­tween the crois­sants as well as on top.

2 Whisk to­gether the eggs and milk, and plenty of sea­son­ing. Pour over the crois­sants, then scat­ter with the toma­toes and chives. Cover with foil and chill overnight, or for at least 6hr.

3 Pre­heat oven to 180°C (160°C fan) mark

4. Un­cover and cook the strata for 1hr un­til puffed and golden (the cus­tard should be just set). Leave to rest for 5min be­fore serv­ing. PER SERV­ING 418cals, 24g pro­tein, 26g fat (13g sat­u­rates), 22g carbs (8g to­tal sug­ars), 2g fi­bre
