Spiced Sumac Welsh Lamb Kebabs With Cauliflower 'Couscous'
Great for alfresco dining and barbecues.
Prep time 30min. Cooking time about 15min. Serves 4
• 800g boneless PGI Welsh Lamb neck, cut into chunks
FOR THE MARINADE
• 3tbsp sumac powder • 2tbsp oil
• Rind 1 lemon
• Juice ½ lemon
FOR THE ‘COUSCOUS’
• 1 head of cauliflower (thick stalks removed), pulsed in a food processor or grated on a coarse grater
• Dash oil
• 1-2tbsp pomegranate seeds • Handful mint leaves, chopped
• 8 dried apricots, diced
• 6 dates, stoned and chopped
• 4 spring onions, sliced
• Rind and juice 1 lime • Pomegranate molasses, to serve
YOU WILL ALSO NEED

1 In a large bowl, mix together all the marinade ingredients and seasoning. Add the lamb and leave to marinate for at least 30min.
2 Thread the lamb chunks on to pre-soaked wooden skewers. Cook on a hot grill, barbecue or griddle pan for approximately 10min, turning and basting with the marinade.
3 For the couscous, fry the cauliflower crumbs in hot oil for 5-6min. Set aside to cool. In a large bowl, mix remaining ingredients and add cooled cauliflower. Transfer couscous to a serving plate and put the kebabs on top. Drizzle over pomegranate molasses to serve.
