Frozen Fruit Kebabs with Hot Chocolate Sauce

A wonderfull­y simple and refreshing recipe. The contrast between the hot, sweet sauce and chilled fruit is just sublime. Try experiment­ing with your favourite fruits. Hands-on time 20min, plus freezing and softening. Cooking time about 5min. Serves 8  About 800g mixture of fruit, we used:

 16 blueberrie­s

 16 grapes

 2 kiwis, peeled and cut into bite-sized pieces

 2 nectarines, destoned and cut into bite-sized pieces

 1/2 mango, peeled, destoned and cut into bite-sized pieces FOR THE HOT CHOCOLATE SAUCE  200g white chocolate, chopped  200ml double cream

 3 ripe passion fruit

YOU WILL ALSO NEED

 8 wooden skewers

1 Line a baking tray with baking parchment. Thread all the fruit (except the passion fruit) on to the skewers, alternatin­g the varieties. Arrange on the lined baking tray and freeze for at least 4hr, until firm.

2 When ready to serve, remove the skewers from the freezer, arrange on a platter and allow to soften at room temperatur­e for about 10min.

3 Meanwhile, make the hot chocolate sauce. Melt the chocolate and cream in a heatproof bowl set over a pan of barely simmering water. Next, halve the passion fruit and scoop the pulp and seeds into a sieve placed over a jug. Work the pulp well to extract all the juice. If you like, stir a few of the seeds back into the sieved juice, discarding the rest.

4 Drizzle some of the hot sauce over the skewers and pour over some of the passion fruit juice (and any seeds, if present). Serve with the remaining hot chocolate sauce and passion fruit juice, for drizzling over.
