Eat a cheesy tuna melt
INGREDIENTS
160g can of tuna
3 tbsp mayonnaise
⅛ red onion or the white and pale green parts of a small spring onion, finely chopped
1 tsp capers or 3-4 olives, finely chopped
Salt and black pepper
Mature cheddar cheese, sliced
Pain de campagne or sourdough, sliced Extra mayonnaise or butter Gherkins, cut lengthways into spears
method
1. Drain the tuna and mix it with the mayonnaise, onion and olives or capers with a pinch of salt and several twists of black pepper. Taste it and adjust accordingly.
2. You have enough tuna for two or three sandwiches. To make one, diligently spread the tuna mix with a fork on one slice of bread and arrange the cheese slices to cover. Top with another slice of bread to make a sandwich.
3. Spread the top of the sandwich with butter or mayonnaise.
4. Heat a large frying pan over a medium flame and, when it’s hot, put the sandwich in, buttered side down.
5. Use a plate, saucepan lid or any other weight of your choosing to apply downward pressure to the sandwich (this week, I used a small plate with a pestle and mortar balanced on top – YOLO).
6. When the underside of the sandwich is golden, butter or mayo the top and flip it. Weigh it down again and fry until both sides are perfectly golden.
7. Serve with gherkins.
