Bake Off star Freya Cox is on a mission to offer vegan alternatives to our favourite sweet treats

THE Great British Bake Off ’s first vegan contestant Freya Cox helped introduce many of us to the plant-based versions of our favourite cakes and treats during her time on the show, something she’s keen continue after exiting the big tent.

The 19-year old, from Scarborough – who was the youngest contestant on last year’s show says: “The response people have had to the vegan bakes and recipes I’ve shared is so exciting to see.

“I feel so lucky that Bake Off has opened doors for amazing opportunities.”

One of these opportunities is a collaboration with Swiss pâtissiers and chocolatiers Rhythm 108 to create delicious plantbased recipes, two of which she shares with us below.
