Pesto Baked Eggs
Bust out a banging brunch this Easter, thanks to this simple recipe using ingredients you’ve probably got knocking around in the cupboards already. Taken from chef Chris Baber’s new book Easy (Ebury, £16.99), which is out this week, it does exactly what it says on the tin.
Ingredients: (Serves 1)
l 1 tbsp extra-virgin olive oil, plus extra to serve l 1 garlic clove, sliced l 400g can cherry tomatoes l 3 tbsp basil pesto l 2 eggs l Salt and pepper l Bread, to serve
Method: 1 Heat the oil in a small frying pan over a medium–high heat. 2 Fry the garlic for 30 seconds, then stir in the tomatoes. Add two tbsp of the pesto and season with salt and pepper. 3 Bring to the boil, then reduce the heat to medium, cover loosely and simmer for 8–10 minutes, until you have a fairly thick sauce. 4 Make two wells in the tomatoes. Crack an egg into each well, cover and cook for about five minutes or until the whites are set and yolks are still soft. 5 Take off the heat, spoon over the remaining pesto and drizzle with a little more oil. Serve with bread to dip in the egg yolk and sauce.
Following its enforced closure during the pandemic, Disneyland Paris is now fully open again and ready to party as it marks its 30th anniversary.
The iconic pink castle has been given a fairy-tale makeover and is looking prettier than ever before, thanks to 41,200 sheets of gold leaf – applied by hand. Mickey, Minnie and pals have all been decked out in brand-new outfits and Minnie has her firstever trouser suit, designed by Stella Mccartney.
So, we grabbed some birthday cake and went along to give Mickey the bumps. you’ll be spoilt for choice. We loved Star Wars: Hyperspace Mountain and Indiana Jones And The Temple Of Peril, and don’t miss Crush’s Coaster, inspired by Finding Nemo, all located in the Studio Park.
Another great ride that’s perfect for kids off all ages (including big ones) is the Ratatouille Adventure. Don your special glasses and see the world of the rodent chef brought to life in glorious 4D. Our ultimate favourite, though, was Big Thunder Mountain, which can be found in the main park, along with the Pirates Of The Caribbean and the Phantom Manor haunted house. If you’re a fan of the big rides, we’d recommend splashing out on the Premier Access pass, so you can join the fast lane and beat the queues.
AND RELAX
After a long day in the theme parks, staying on-site is the way to go, and there is plenty of choice to suit all budgets. All accommodation is within a 15-minute walk of the resort, too. The new Marvel-themed New York Hotel is the coolest of the bunch, especially if you like celeb spotting. Tom Fletcher and Giovanna Fletcher, Vogue Williams and Spencer Matthews, and JLS’ Aston Merrygold with his fiancé Sarah Louise Richards,
and their families have all graced the venue with their presence.
SNACK ATTACK
Did you even go to Disneyland Paris if you didn’t eat and photograph the Mickey Mouse-shaped snacks? Menus in the resort’s 59 restaurants have also had a 30thanniversary makeover with new items added, including a fruity gin cocktail, Mickey-shaped pizzas, brightly coloured macarons, and Mickey and Minnie-shaped cookies and waffles. If they taste as good as they look, you’re in for a treat. Even more exciting, fan favourites, previously only available at the international Disney resorts – such as the Frozen Pineapple Whip, Mickey Ice Cream and jumbo roast turkey leg – are also now available.
LIGHT UP, LIGHT UP
The new Disney D-light is part of the nighttime firework and illuminations show and it is spectacular, with its larger-than-life projections of classic Disney characters on the castle. They’ve also added an incredible drone show – a first for any Disney park. The mini Led-mounted flying machines form a sparkling “30” in the sky above the castle, accompanied by a new 30th anniversary song. And don’t miss Dream… And Shine Brighter, the new uplifting show that takes place several times a day in front of Sleeping Beauty Castle. It’s a great chance to see all your favourite characters including Mickey, Minnie and Daisy Duck in their new shiny outfits, and features a mash-up of lots of classic Disney songs. ■
