BLACK BEAN & SWEET POTATO BURGERS
Makes 4 burgers Ready in 20 minutes

INGREDIENTS
For the burgers
• 100g/4oz cooked rice
• ½ x 400g tin black beans, drained
• 1 large sweet potato, cooked
• 50g/2oz ground almonds
• 1 tsp smoked paprika
• 1 tsp garlic granules
• 1 tsp salt
To serve
• 4 burger buns, slit in half
• 1 avocado, stone removed, peeled and quartered
• 50g/2oz wild rocket
1. Add all of the burger ingredients to a blender and whizz until combined but still chunky.
2. Heat the barbecue to a medium heat.
3. Divide the burger mixture into 4 equalsized portions and roll into patties. Cook on the barbecue for 3 minutes each side until golden and cooked through.
4. Char the burger buns on the grill for 2 minutes.
5. Add the rocket to the 4 bun bases, top each with a burger followed by the avocado. Cover with a bun top and serve straight away.
