SLOW BBQ PORK BELLY WITH JACK DANIELS AND AP­PLE GLAZE

With the cold weather al­most upon us we like to slow cook the com­fort cuts, packed with flavour, juicy and melt in your mouth.

For the pork

• 500g pork belly

• 2 lemons

• 1 bunch thyme

• 300ml veg­etable oil

For the Ap­ple sauce

• 225g ap­ples, peeled, cored and chopped

• ½ lemon, zest only

• 2 tbsp wa­ter

• 15g/½oz but­ter

• 1 tsp caster sugar

To fin­ish the sauce

For the paste

• 10 thyme stalks

• Ap­ple sauce

• 100 ml jack Daniels

• 150 ml brown sugar

For the jack Daniels sauce

• The paste

• 500 ml good chicken stock • 1 red chilli

• 1 large white onion

• 2 gar­lic cloves

• 1 tbs ginger

• 100 ml soy sauce

• 5 drops fish sauce

• 200 ml co­conut milk • 100 g brown sugar

• 1 lime juice
