Claire Baker’s Baked Sweet Potato with Chilli Baked Beans

SERVES 3

1 Pierce 3 sweet potatoes and microwave for 8 minutes. Rub with extra-virgin olive oil and salt, and put in a 200 degrees/180 degrees fan/gas mark 6 oven for 15-20 mins.

2 Melt 1 tbsp of coconut oil in a pan, fry a diced red onion and 1 garlic clove until translucen­t. Add a tin of kidney beans, a tin of butter beans and a tin of chopped tomatoes, along with a tsp of smoked paprika and tsp of chilli flakes. Simmer and cook for around 20 mins.

3 Serve the sweet potatoes with beans on top. Top with feta cheese

and/or sour cream.
