CAULIFLOWER AND APPLE TRAYBAKE PREP TIME 10 MINS COOK TIME 30 MINS SERVES 4
INGREDIENTS
● 2 JAZZ™ apples, cored and cut into thin slices
● 400g cauliflower florets
● 2 red peppers, cut into chunky slices
● 4 cloves of garlic
● 4 shallots, each cut into segments
● 2 tbsp olive oil
● 1 tbsp sherry vinegar
● 2 tbsp harissa
● Salt and pepper to taste
METHOD
1 Preheat the oven to 200°C/Fan 180°C/ Gas Mark 6.
2 Break the cauliflower florets apart, cut the peppers into strips, break apart the shallots and peel the garlic cloves before adding to a large bowl with the apple slices.
3 Mix the olive oil, harissa and sherry vinegar together and pour over the veg, then mix everything with your hands to ensure the veg and apples are well covered. 4 Place the marinated veg and apples on an oven tray and bake for 20 minutes.
5 Take out, give it a mix and bake for another 10 minutes. Serve with couscous, coconut yoghurt and mint leaves.
