Pork and chestnut stuffing

INGREDIENT­S

● 20g butter ● 1 white onion ● Big pinch of fresh sage ● Big pinch of freshly chopped parsley ● Handful of dried apricots ● 50g beef suet or vegetable shortening ● 80g dried breadcrumb­s ● 1 beaten egg ● 150g cooked chestnuts ● 1 lemon, halved ● 200g minced pork ● Salt and black pepper, to season

METHOD

1 Put the butter, onion, sage, parsley, apricots, suet or shortening, breadcrumb­s, beaten egg and chestnuts into a food processor. Squeeze in the lemon juice from both halves, but keep one of the squeezed halves for later. Whizz until finely chopped.

2 Transfer the stuffing mixture to a mixing bowl and add the ground pork. Mix together and season well. Stuff into the cavity of the turkey and use the reserved lemon half to partly seal the entrance.
