Chorizo and Gruyère puffs

INGREDIENT­S

● 75g butter

● 110g plain four, sieved

● 3 medium eggs

● 75g Gruyère cheese, diced

● 75g chorizo, skin-removed, diced and fried

METHOD

1 Preheat the oven to 180°C/160°C Fan/ Gas Mark 4. In a pan, combine the butter, 175ml water and ½ tsp salt. Bring to the boil, remove from the heat and stir in the flour until smooth.

2 Return to a medium heat and beat for 1 minute. Remove from the heat and leave for 1 minute. Beat in the eggs, one at a time, until glossy, add the Gruyère and chorizo. Season with black pepper.

3 Spoon 2cm balls of the mixture onto 2 greased baking trays. Bake for 30 minutes, or until puffed and golden. Pierce to allow the steam out. Serve warm.
